I don’t know about you but I have been BUSY this summer. So my goal has been to create the quickest, easiest, tastiest meals possible. Lettuce Roll-ups fit the bill to a tee. I know many people struggle when asked to give up bread. In our country, lunch is all about sandwiches and what’s a sandwich without bread? Well…its pretty damn good actually! Lettuce roll-ups provide all of the nutrition of what’s usually inside of the sandwich without the gluten or heavy grains used to make the bread. Plus…they take minutes to make.
My favorite right now is the combination of smoked wild salmon, Greek olives and avocado all wrapped up in organic romaine leaves. It provides healthy proteins, fats and veggies and takes 5 minutes to make.
This lettuce roll-up recipe is Paleo, Pegan (that stands for pescatarian-vegan), gluten-free, keto-friendly and low-carb. It can easily be made AIP by replacing the smoked salmon with an AIP-friendly meat. Most smoked meats contain spices that aren’t AIP compliant. Try using roasted turkey, Paleo-mayo and pickles, or sliced hamburger and all the fixin’s.
INGREDIENTS
- 6 small slices of smoked salmon
- 1 small avocado; sliced
- 4 tablespoons greek olives; sliced
- 2 large romaine lettuce leaves
INSTRUCTIONS
- Wash lettuce leaves and lay them out on a plate
- Layer with salmon
- Top with olives and avocado
- Wrap or fold, depending on how many fixin’s you used
- Enjoy!
